Description of Salsify (Tragopogon porrifolius):
Salsify, also known as oyster plant due to tasting similar to oysters, is a common broadleaf plant. When the plant matures, it ranges from 2 to 4 feet in height and only has a few stem branches. It releases a milky sap when cut. It has a deep taproot that is thick and fleshy.
